Description
We are skipping straight to dessert on this round and we present the new Prato do dia, Baba de Camelo. The most delicious sweet dish named after a humped animal’s body secretions.
Baba de camelo is a sweet, delicious, caramely treat and goes down great with an espresso. It’s the ultimate Portuguese comfort dessert—smooth, rich, and just the right amount of wrong when you try to explain the name to your non-Portuguese mates. We’ve put it on a hoodie so you can wear your love for condensed milk-based indulgences with pride, no matter how many questions you get about the name.
A Receita (The Recipe)
Because once you’ve had a taste, you’re going to need to know how to whip it up at home.
Ingredientes:
1 Can Condensed Milk: The heart of the operation (boiled for 2 hours if you aren’t buying the pre-boiled tins).
5 Eggs: Separated with precision.
A pinch of Salt: To balance the sugar rush.
Toasted Almonds: Crushed for that essential crunch.
Instruções:
The Base: If you’re starting from scratch, boil that tin of condensed milk until it turns into a thick, golden caramel. Let it cool before doing anything else.
The Fold: Beat your egg whites until they form stiff peaks—don’t cut corners here. Gently whisk the egg yolks into the caramel, then carefully fold in those whipped whites. You want it airy, not flat.
The Chill: Pour into individual glasses or one big bowl. Top it off with the toasted, crushed almonds.
The Wait: The hardest part—let it set in the fridge for at least 4 hours. It needs the time to reach that perfect, mousse-like consistency.
The Finish: Serve chilled with an espresso. It’s the only way to do it.
If this all seems like too much work? Check your local Portuguese restaurant for one—or better still, book a Portuguese holiday and have one over there.
The Oporco Promise:
We aren’t taking things off the menu. We’re building a library of favorites. Whether it’s a main, a snack, or a bit of local dialect that only the locals understand, the Prato do Dia range is our way of staying connected to the culture, one dish at a time.
